Salmon with Asian Citrus SauceHold onto your hats. Here's a super speedy and ultra delicious recipe that needs three pans: one for rice; one for vegetables and a frypan for the fish. Serves 4.Ingredients:
Instructions:Put rice on to boil.Combine garlic, ginger, honey, juice, fish sauce, chilli sauce in a container with a lid and shake well. Like magic, the sauce is done! Add olive oil to saucepan, and gently cook onion. When soft, add peppers. In frypan, add a little olive oil and begin cooking salmon steaks. Use a medium low heat. After about 4 minutes, turn over and at this point, add about half of the Asian citrus sauce. Continue cooking salmon for 4 minutes on this side. Back to onions and peppers. Add chopped spring onions. Back to the fish. Add the rest of the sauce. It will start to thicken. When rice and fish are done (you can tell with salmon steaks by watching the change in colour from red to very light pink), begin to serve up. Rice first, add fried pepper & onions, place steak on top. Pour over some of the sauce from the frypan. Top with chopped coriander. |
