Yaki Soba

Yaki Soba This recipe was sent in by Moki. Moki taught me almost everything I know about cooking. He is a very hard task master, some might even say, cruel.

Preparation 5 minutes
Cooking 40 minutes
Serves 3 - 4

Ingredients:

  • 300 gm mince
  • 300 g - 500 g thick rice noodles
  • 1 clove garlic
  • 1 dstsp ginger
  • red pepper
  • 2 handfuls of cabbage
  • bunch of spring onions
  • couple hand fulls of bean shoots (150 - 200 g)
For the Yakitori Sauce:
  • 1/2 cup soya sauce
  • 1/2 cup mirin (aka rice wine)
  • 1/3 cup sugar

Instructions

  1. Soak the noodles. Chop up the cabbage, red pepper, spring onion and garlic.
  2. Brown the mince in a pan.
  3. Stir fry garlic, ginger, red pepper strips and cabbage in a wok/deep pan.
  4. Make the yakitori sauce while this is happening: add soya sauce, mirin wine and sugar to a separate pan and boil until thick
  5. Add mince and noodles and yakitori sauce
  6. Add spring onions and bean shoots. Cover and turn off heat. Sit for few minutes.
