Green chicken bagels
This recipe was sent in by Mel Clark.
Serves 2
Ingredients:
- 2 plain bagels, sliced in half
- 2 cooked chicken breasts, chopped into smallish bits
- 4 tablespoons of mayonnaise (NB: low fat stuff optional)
- 2 tablespoons green pesto - make or buy
- 2 handfuls of rocket/ spinach/ both
- 2 handfuls fresh basil
- Freshly ground pepper
- Olive oil/ butter for the bagels
- A couple of extra basil leaves to make it look pretty
Instructions
- Switch grill on medium. Toast the bagels outside up until a little more golden
- Turn them over, and butter/ oil before toasting (I reckon this is the secret of a really good bagel!) and stick bagels back under the grill.
- Meanwhile, mix up the pesto, mayo, basil and pepper in a bowl.
- When lightly toasted, remove the bagels, and pile on the spinach and rocket.
- Then top with the chicken mixture, add the top of the bagel, cut in half for ease of mouthful
Serve with the extra basil leaves on the side.
