Green chicken bagels

Serves 2

Ingredients:

  • 2 plain bagels, sliced in half
  • 2 cooked chicken breasts, chopped into smallish bits
  • 4 tablespoons of mayonnaise (NB: low fat stuff optional)
  • 2 tablespoons green pesto - make or buy
  • 2 handfuls of rocket/ spinach/ both
  • 2 handfuls fresh basil
  • Freshly ground pepper
  • Olive oil/ butter for the bagels
  • A couple of extra basil leaves to make it look pretty

Instructions

  1. Switch grill on medium. Toast the bagels outside up until a little more golden
  2. Turn them over, and butter/ oil before toasting (I reckon this is the secret of a really good bagel!) and stick bagels back under the grill.
  3. Meanwhile, mix up the pesto, mayo, basil and pepper in a bowl.
  4. When lightly toasted, remove the bagels, and pile on the spinach and rocket.
  5. Then top with the chicken mixture, add the top of the bagel, cut in half for ease of mouthful
Serve with the extra basil leaves on the side.
