Spicy Chorizo Bean Stew

You probably already know how much we love sausages at easypeasymeals.com. Well, don't even get me started on the magnificance and delicousness of the chorizo sausage. For several years, I actually thought the proper name for these were 'spicy chorizo sausages.' So fullsome, so robust, ... This recipe was sent in by George who shares the love. Serves 4

Ingredients:

  • 2 large potatoes chopped into cubes
  • 30 ml olive oil
  • 1 red onion
  • 2 chorizo sausages ( you can get these from the deli - get the whole ones not pre sliced ones. They are like poison.)
  • 5 cloves garlic
  • dried chilli flakes or some fresh chopped chilli
  • 2 tsps paprika
  • 400g tin of butter beans
  • 410g tin of tomatoes
  • 1 tablespoon of tomato paste
  • 1/2 cup of water
  • 2 bay leaves
  • flat leaf parsley
  • salt and pepper

Instructions

  1. Cook the diced potatoes in the microwave for a 2 minutes to get it going - set aside.
  2. Place the chopped onion, chilli and garlic into saucepan and fry off in the olive oil gently for a couple minutes.
  3. Add chopped chorizo sausage and paprika and fry for a further 2-3 minutes.
  4. Add the tinned tomatoes, cubed potatoe, tom paste, water and bay leaves and simmer for 10 minutes.
  5. Add the butter beans and simmer or a further 35 minutes - or until the pototo is tender.
  6. Turn the heat off and add the chopped parsley.
  7. Serve with rice
