Darren's Dad's Dahl

Simple, healthy, tasty. And no sausages in sight. This recipe was sent in by Darren Gibson. I made this tonight and it's pure easypeasy gold. Turn it into a complete meal by adding some of the optional ingredients to beef it up; naan bread; raita or yoghurt and mango chutney.

Ingredients:

  • 8 oz dahl (red lentils)
  • 1 pint water
  • 1 onion, diced
  • 1 chicken stock cube
  • 1 level tsp turmeric
  • 1 tin chopped tomatoes
  • salt to taste
  • 2-3 green chillies
  • juice of half lime or lemon
  • Optional: any of the following: chopped carrots, chickpeas (soaked overnight), potato, sweet potato, 2 tblsp fresh chopped coriander

Instructions

  1. Gently fry onion in olive oil. Add all the ingredients (except lime/lemon juice & coriander).
  2. Simmer for 40 minutes.
  3. When ready to serve, add lime juice.
  4. Sit back and let the magic of India seduce you!
