Darren's Dad's Dahl
This recipe was sent in by Darren Gibson. I made this tonight and it's pure easypeasy gold. Turn it into a complete meal by adding some of the optional ingredients to beef it up; naan bread; raita or yoghurt and mango chutney.
Ingredients:
- 8 oz dahl (red lentils)
- 1 pint water
- 1 onion, diced
- 1 chicken stock cube
- 1 level tsp turmeric
- 1 tin chopped tomatoes
- salt to taste
- 2-3 green chillies
- juice of half lime or lemon
- Optional: any of the following: chopped carrots,
chickpeas (soaked overnight), potato, sweet potato, 2 tblsp fresh chopped coriander
Instructions
- Gently fry onion in olive oil. Add all the ingredients (except lime/lemon juice & coriander).
- Simmer for 40 minutes.
- When ready to serve, add lime juice.
- Sit back and let the magic of India seduce you!
