Get Some Pork on Your Fork!

Fork is now ready for pork What an under-rated product pork is! And we at easypeasymeals want to do something to change that. Pork is for lean, mean eating machines. It gives you 100 per cent every time. Go on - give pork a chance! This recipe is courtesy of Judith and Mark who fly the pork flag loudly and proudly.

Ingredients

  • Serves 4 (or two depending on greed)
  • 1 kg pork, chopped into 1 inch bits (I recommend buying a pork boneless leg - much cheaper- allows for good, meaty chunks, and you can trim off fat)
  • 2 tblsp honey
  • 4 whole cardomon pods
  • 1 cinnamon stick
  • 1 tsp tumeric
  • 1 large onion, finely chopped
  • 2 gloves garlic, finely chopped
  • Pepper and salt
  • 1 tblsp grated orange or lemon rind
  • 200 ml plan yoghurt
  • 1 tsp flour
  • 2 tblsp olive oil

Instructions

  1. First, heat saucepan and warm the honey.
  2. Add oil and when warm, stir in por and cook until golden brown.
  3. Add 200 ml water and season with salt. Simmer until tender (about 15 mins) then turn up heat to evaporate liquid.
  4. Add oinion, garlic, spices and citrus rind. Cook gently for 5 minutes.
  5. Beat flour into yoghurt and gradually stir in.
  6. Cover and remove from heat. Leave for 25 minutes to let the magic (cross over of flavours) happen.
  7. Serve with rice.
