Savoury Pockets
This recipe was sent in by George who is totally obsessed by her invention of 'The Savoury Pocket'. It is CRUCIAL that the pancakes not be too thick because otherwise there will be no 'pocket', only tears.
Serves 2 or 3
Ingredients:
- 1 1/4 cups of lowfat milk.
- 3/4 cup plain flour.
- 1/4 cup of wholemeal flour.
- 2 eggs.
- fillings for pancakes - examples - cheese, bacon, mushroom, garlic.
- 1 non-stick frypan.
Instructions
- Make your pancake mixture by mixing the milk, flour and eggs in a bowl until smooth. You
can use a blender/food processor or a fork to do this.
- Leave the batter in the fridge for at least 1/2 hour before cooking.
- While the batter is resting in the fridge you can prepare you pocket fillings.
- Gently fry your chopped mushrooms with garlic.
- Microwave some chopped bacon covered with a paper towel to stop splattering.
- Grate some cheese.
- Make sure you have your fillings ready to go BEFORE you start cooking the pancakes.
- When the batter is ready gently pour some into a fairly hot, lightly oiled non stick
fry pan.
- Let it cook until bubbles start to appear. (usually about 2 or so minutes)
When the bubbles appear the pancake is ready to be turned.
Remember that because you are filling the pancake it needs to be large - ie.
nearly as big as the entire base of the fry pan.
- Turn the pancake and immediately put a small amount of filling (cheese, bacon and mushroom)
onto one half of the turned pancake.
- The golden rule is "DO NOT OVERFILL".
- Let the pancake cook for about 30 seconds then fold the pancake in half. Ie. turn the
non-filled half over so that it rests on top/covers the filled half.
(ie. it should look like a half moon - with the filling in the middle.)
- Seal the edges with your egg flipper/or a fork.
- If its well sealed you should now be able to gently flip and further cook the other side
for about another 30 seconds.
- This is basic pancake mixture that is delicious served with many fillings/toppings
sweet or savoury: such as honey, lemon juice, maple syrup, bananas, pears, smoked chicken,
ham, herbs, feta cheese etc.
- NOTE you can use any combination of wholemeal/plain flour - essentially you need have 1 cup of
flour - so if you hate wholemeal used 1 cup of plain flour instead - or if you like
wholemeal use 1/2 plain and 1/2 wholemeal.
