Sticky Date Pudding

When my sister George (creator of this recipe) used to announce that she was making this, loud, persistent shrieking would result, such was our excitement. This is so good it will make you cry.

Ingredients

  • 250 g chopped dates
  • 1 tbsp butter
  • 1/2 cup boiling water
  • 1/2 tsp bicarb soda
  • 1/2 cup milk
  • 1 cup plain flour
  • 1/2 cup brown sugar
  • Caramel sauce:
    • 3/4 cup brown sugar
    • 1/4 cup melted butter
    • 2 tbslp golden syrup (optional)
    • 1/4 cup cream

Instructions

  1. Melt 1 tbslp butter in boiling water.
  2. Add bicarb. soda.
  3. Sift dry ingredients into a bowl.
  4. Add dates, water, milk and stir until smooth (yes, the mixture will be quite runny)
  5. Pour into a greased pudding bowl or tin. (cover with lid or foil)
  6. Place in large saucepan that contains boiling water - should come up to half way on pudding bowl). Replace saucepan lid.
  7. Steam for 2 hours, checking 3 - 4 times to ensure that saucepan hasn't run dry.
  8. To make caramel sauce, simply add all ingredients together in a saucepan (add cream last once sugar is dissolved and mixture is gently bubbling).
  9. After two hours, prepare yourself.
  10. Gently turn pudding onto plate. Gather round friends to observe this thing of beauty.
  11. Serve with caramel sauce.

Footnote:

You may need to use a protractor and a neutral third person oblivious to the delights of sticky date pudding to administer carving of portions.
