Vindaloo
This recipe was sent in by Darren Gibson. A visit to the local Asian supermarket will secure the vital ingredients of ghee, dharja & jeera.
Ingredients:
- 1 onion
- 1 tblsp ghee
- 5 tablespoons vinegar
- 1 1/2 teasponos dharja
- 1/2 teaspoon chilli powder (or more to taste)
- 1 1/4 teaspoons jeera
- 1 teaspoon turmeric
- 3 table spoons tomato puree
- 1 lb chopped turkey, chicken, or pork
- 2 potatoes cut into 2 cm squares
Instructions
- Fry one onion until VERY soft
- Add spices and vinegar mix. Fry for 10 minutes on a gentle heat
- Add meat and potatoes. Cook for 20 minutes.
- Serve with any of the following: rice, chapatis, naan, raita, sliced banana in shredded coconut.
