This is another top shelf recipe was sent in by Moki who most certainly has been busy. Serves 3.
Ingredients:
- chopped onion
- 1 clove garlic
- 2 tblsp plain flour
- 200 gm yoghurt
- 1/2 tsp cumin
- 1 tbsp mint
- salt and pepper
- 2 beaten eggs.
- 3 chicken breast/lge thighs
- parmesan
Instructions
- Preheat oven to 280 C
- Fry onion and garlic. Beat 2 tblsp plain flour into 200 gm yoghurt (you might need more than this. In fact, you will).
- Add 1/2 tsp cumin, 1 tbsp mint, salt and pepper and 2 beaten eggs.
- Cut 3 chicken breast/lge thighs into pieces.
- Put in overproof dish and cover with onion and yoghurt.
- Sprinkle with parmesan and pepper.
- Bake 40 mins.
- Serve with steamed rice.
