Baked Chicken and Yoghurt

This is another top shelf recipe was sent in by Moki who most certainly has been busy.  Serves 3.

Ingredients:

  • chopped onion
  • 1 clove garlic
  • 2 tblsp plain flour
  • 200 gm yoghurt
  • 1/2 tsp cumin
  • 1 tbsp mint
  • salt and pepper
  • 2 beaten eggs.
  • 3 chicken breast/lge thighs
  • parmesan

Instructions

  1. Preheat oven to 280 C
  2. Fry onion and garlic. Beat 2 tblsp plain flour into 200 gm yoghurt (you might need more than this. In fact, you will).
  3. Add 1/2 tsp cumin, 1 tbsp mint, salt and pepper and 2 beaten eggs.
  4. Cut 3 chicken breast/lge thighs into pieces.
  5. Put in overproof dish and cover with onion and yoghurt.
  6. Sprinkle with parmesan and pepper.
  7. Bake 40 mins.
  8. Serve with steamed rice.
