A specialised chook recipe

A hearty feast A specialised chook recipe from D'Ag in outback Queensland, Terra Australis

40 minutes cooking

Ingredients:

  • First you gotta catch the chook, or alternatively go to the Supa Market or a purveyor of all things CHOOK.
    You will need for 2 people 4/6 chicken drumsticks depending on the size of the drumsticks and the people.
  • 1/2 table spoons olive oil
  • 1 clove of crushed garlic
  • 1 teaspoon ground ginger, (S'tralian of course)
  • 2 teaspoons sweet chilli sauce
  • 1 good sprig of rosemary
  • 3 sprigs of thyme. (dried rosemary and thyme will do if you can't get fresh)
  • 2 peeled medium potatoes. diced but not too small
  • 6/8 mushrooms sliced
  • 2 cups of strong chicken stock
  • 1 large glass of white wine.

Instructions

  1. If the drumsticks have skin on it will be necessary to remove the skin and discard it.
  2. Heat a heavy pan or wok, then add the oil then the drumsticks and brown them.
  3. Then add the chicken stock, garlic, ginger, sweet chilli sauce, rosemary, thyme and potatoes and reduce heat to a gentle simmer, COVER and cook for 20 minutes,
  4. Add the mushrooms and simmer. The mix should have thickened enough during cooking. If too thin, thicken with a little corn flour.
  5. Ten minutes after adding the mushrooms, heat another saucepan of water.
  6. 5 minutes later or when it boils, add some 5 minute Chinese noodles.
  7. When all is cooked, serve the chicken and associated vegies with the noodles. Top with parsley or Cilantro.
NO WE DIDN'T FORGET THE LARGE GLASS OF WINE, THAT WAS FOR THE COOK.
