A taste of Australia: Curried Sausage

Curried sausage and rice This recipe was sent in by Moki. It works on the sweet and sour principle: nice and spicy but the fruit takes the edge of it. This recipe differs from other curried sausage recipes in that it has a tomato base to it. This is our web site and we will make things the way we like.

Preparation 10 - 15 minutes
Cooking 20 - 30 minutes
Serves 3 - 4.

Ingredients:

  • 6 sausages
  • 1 onion
  • 1 tablespoon curry powder
  • 1 tablespoon flour
  • 2 cans Tomatoes
  • 1 red or green pepper (though the pic shows yellow) a.ka. capsicum
  • 100 g mushrooms
  • 1 handful of peas
  • 1 chopped apple
  • 1 tablespoon chutney

Instructions

    Boiling the snags
  1. Start to boil sausages.
  2. Meanwhile, chop onion, mushrooms & apple and slice the pepper. Open the cans of tomato.
  3. Fry onion, curry powder and flour in a wok/big frypan. (You will be adding a lot ingredients in the next couple of steps.)
  4. Add the tomatoes, pepper, mushrooms, peas, apple, chutney (whatever)
  5. By the time you have prepared this, the sausages should be ready. (10 - 15 minutes should have elapsed.) Slice and add the sausages.
  6. Cover and cook on a low/medium heat for another 20 - 30 minutes. Start to prepare the rice or boiled potato you are going to serve it with.
  7. When both are ready, serve.
